Libyan Pumpkin Dip (Mbattan)

A pumpkin split open and roasting under the Libyan sun, its flesh going soft and sweet. Libya lies where the Mediterranean runs up against the sands of the Sahara, and this is where the story of mbattan, a plain and good pumpkin dip, begins. It is made from very little, the way Libyan cooks have long made much from little, bending to a land that is vast and hard and generous only in places.

Cumin, warm and earthy, settles everything down, carrying a faint memory of the caravans that crossed the desert with spices and stories in their packs.

Salt, the plainest seasoning of all, matters most. It lifts every other flavor without calling attention to itself. The smallest hand at the table is often the one holding it together.
