Pickle Jars on Main Street

The jars on the shelves are not decoration, or not only. Published on Main pickles and preserves whatever the farms and forests of British Columbia hand over at their peak, then lines the dining room with the results. It is a library of seasons, which suits a restaurant called Published. Chef Gus Stieffenhofer-Brandson runs the kitchen at 3593 Main Street, and his crew sources and forages like people who believe the calendar is the real head chef.

The awards stack up in a way that should make you suspicious. A Michelin star in Vancouver's first guide in 2022, held every year since. First place on Canada's 100 Best that same year, the first British Columbia restaurant to top the list. Then North America's 50 Best, twenty-eighth in 2025 and seventeenth in 2026. I spent years in consulting watching prizes go to whoever bought the table. These were not bought. Michelin has written up a pappardelle with fresh cheese and a green summer legume sauce, and a Fraser Valley duck breast with cabbage, beets and lingonberry. Familiar words, surprising plates.

You can eat à la carte, book the family-style chef's dinner, or go all in on the seasonal tasting menu. Start with à la carte if you want to keep your head and your wallet. The doors open every night at five, which is generous for a room this good. Book ahead, sit where you can see the jars, and order whatever the server says just came in. They will be right.
