The building does half the work. Eleven Madison Park sits at the base of an Art Deco tower on the corner of East 24th and Madison, looking over Madison Square Park, and the ceilings are high enough that you start sitting up straight before the first plate lands. Daniel Humm owns the place and runs it, and the pitch is seasonal food from farms he names, Magic Farms among them.
The restaurant's own site shows plates like scallop with kohlrabi and hazelnut, and a tardivo salad with blood orange and horseradish. Read that again. These are not showy dishes. They are vegetables and shellfish arranged by someone who has thought hard about how much to leave out. The beverage side is serious too, with a long wine list and a bar program that takes cocktails seriously.
Locals argue about this room the way they argue about everything, which is a compliment. Reservations go through Resy, so plan ahead and expect to pay for the evening. If you want one night in this city where every detail has been argued over by adults, this is the address. Bring patience for the schedule and an appetite for restraint. The people who love this place love it for the discipline, and the people who argue with it are still booking again. That tension is the sign of a kitchen that has a point of view.
