A ramen shop that caps its own sales deserves your attention. Shiki Menya, on 1st Avenue NE in Bridgeland, has held itself to roughly one hundred and fifty bowls a day, because the tonkotsu broth and the hand-rolled noodles only stretch so far before quality slips. When they are gone, they are gone. That is not marketing. That is a kitchen with standards.
The broth is pork, cooked long and rich, and the noodles are rolled by hand. The bowl people talk about is the chili goma, with chopped pork, vegetables, peanuts and cashews, nutty and hot at the same time. The menu changes by season, and the summer 2026 menu marked the shop's twelfth year, with chili dan dan and chicken karaage among the names. Expect a lineup. The walk-in system has run on a clipboard by the door, which may be the most honest reservation system ever invented.
Next door, the same crew runs the First Avenue Corner Store, selling ramen kits, frozen goods, udon, curry, Japanese sandos and snacks for when the line is too long or the craving hits at home. A ramen club handles delivery on Thursday to Saturday evenings. Payment has historically been cash or debit, so come prepared. Go early, put your name on the clipboard, order the chili goma, and drink the broth to the bottom. The cooks will notice. That is the only review that counts.
