Icelandic Cucumber and Dill Dip, Made in the Midnight Sun
In Iceland the auroras roll across the winter sky and the hot springs murmur all year round, and there once lived a cook named Sigrid. She was as well known for her wit as for her cooking, and she had a way of bringing the Icelandic wilds onto a plate. One bright summer day, with the sun barely willing to set, she went out to make a dish that would taste like the Icelandic breeze and the short, bright summers. What she brought home became the Icelandic Cucumber and Dill Dip, a saga with no heroes in it, only a very good bowl.
She set out with no map and no compass, only a basket and her instinct, walking through the green Icelandic countryside in search of the right ingredients. She found wild cucumbers, their skins wet with morning dew, and dill, its scent as heady as the meadows it grew in.
Back in her small, warm kitchen, with the midnight sun lying low and gold across the table, Sigrid went to work. She chopped the cucumbers with an artist’s care and folded them into creamy skyr, the Icelandic love of dairy in a single spoonful. Then came the dill, chopped fine and scattered over the bowl like a handful of summer. A squeeze of lemon, a pinch of salt, and it was done.
The dip was a sensation, cool as a plunge in a glacier stream and warming as a geothermal spring. It soon became the favorite of every summer gathering, a bowl that pulled people together to celebrate the plenty of the land.
With one dish, Sigrid had tied her own thread into the way Iceland eats. She liked to say, with a modest smile, “I did not make this dip. Iceland did. I only listened to what the land was telling me.”

Ingredients
Method
- In a mixing bowl, combine the Greek yogurt or skyr, grated and drained cucumber, finely chopped fresh dill, and minced garlic.
- Season with salt and pepper to taste.
- Mix all ingredients until well combined.
- Chill the dip in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
- Serve chilled with rye bread or as a refreshing dip for vegetables.
