Belgian Beer Cheese Dip and Two Old Rivals
A glass of Belgian ale, a wedge of cheese beside it: Belgium has spent a long time getting both of these right, and somewhere between the two a small caper took place that people still talk about. This is the true story of the Belgian Beer Cheese Dip, made from a little invention, a little humor, and a good deal of luck.
Henri was a master brewer with a taste for deep thoughts. Luc was a cheesemaker whose wheels could bring a grown man to tears of joy. They were old friends and old rivals, and their arguments over which craft lay closer to the Belgian soul, brewing or cheesemaking, were as regular as their daily bread.
One crisp autumn evening, with amber leaves blowing loose in the wind, the two of them shared a bench at a local folk festival. The air was full of music and laughter and the knock of beer glasses. Somewhere in the middle of a particularly lively polka, Henri turned to Luc with a challenge. “What if we put our crafts together?” he said, his voice rising. “A dip, Luc. My finest beer and your best cheese, all of Belgium in one bowl.”
Luc never backed down from a challenge, and he was secretly curious. With the festival roaring around them, they set to work. Henri chose a beer as layered as the Belgian countryside. Luc chose a cheese known for its creamy body and its depth.
In a makeshift kitchen, with fireworks breaking over their heads, they stirred the beer and the cheese together and added herbs and spices from the Belgian pantry. The pot simmered low. Under their watchful eyes it turned into something neither of them had expected.
The first taste ended the argument. The cheese was rich, the beer was deep, and each one made more of the other, while the herbs and spices gave it a finish that could only be Belgian. Everyone who dipped bread into it agreed they had made something rare.
Word of Henri and Luc’s dip traveled well beyond the festival grounds, and in time it found its place on Belgian tables. People came for the flavor and remembered the friendship.
It is a funny story, really. Two rivals set out to beat each other and ended up sharing the credit. Henri and Luc never did settle which craft mattered more. The bowl settled it for them, one piece of bread at a time.
